5 Winter Themed Salads to Brighten Your Day

Salads are often associated with summer and spring, but this winter, Carver Catalyst has brought you 5 salads, complete with (mostly) in season fruits. If the sun can’t brighten you for the next four months, maybe a Persimmon Pecan salad tried and tested by yours truly, will.

 

Persimmon Pecan

A perfect way to start your December, right? (Source – Food Network)

Ingredients

  • cup pecans
  • about 2 handfuls of spinach
  • about 1 handful of kale
  • 2 persimmons, cut into wedges
  • teaspoons honey
  • cup apple cider vinegar
  • cup olive oil
  • salt and pepper, to taste
  • optional: shredded cheese of your choice

Steps

  1. Combine spinach, kale, and pears in a bowl.
  2. Combine olive oil, apple cider vinegar, honey, and salt and pepper to create a dressing. To make this step easier, use a blender for seamless mixing.
  3. Top with pecans and shredded cheese.

 

Apple Arugula

Sweet with a hint of bitter mint. So winter. (Source – Food Network)

Ingredients

  • about 2 handfuls of spinach
  • about 1 handful of arugula
  • 2 apples, cut into wedges
  • cup assorted nuts
  • teaspoons honey
  • cup apple cider vinegar
  • cup olive oil
  • salt and pepper, to taste
  • optional: crumbled feta cheese

Steps

  1. Combine spinach, arugula, apples and nuts in a bowl.
  2. Combine olive oil, apple cider vinegar, honey, and salt and pepper to create a dressing. To make this step easier, use a blender for seamless mixing.
  3. Top with feta cheese.

 

Pineapple Cucumber

Crunchy and spicy yaaasss! (Source – African Bites)

Ingredients

  • of a full cucumber
  • 4 ounces of pineapple
  • cup shredded lettuce
  • cup bell pepper
  • cup apple cider vinegar
  • cup olive oil
  • salt and pepper, to taste
  • optional: shredded cheese of your choice

Steps

  1. Combine cucumber, lettuce and bell pepper in a bowl.
  2. Add in pineapple and stir lightly.
  3. Combine olive oil, apple cider vinegar, and salt and pepper to create a dressing. To make this step easier, use a blender for seamless mixing.
  4. Top with shredded cheese.

 

Autumn Pear

Ingredients

  • 2 whole pears, sliced
  • about 2 handfuls of spinach
  • about 1 handful of kale
  • cup almonds
  • cup apple cider vinegar
  • cup olive oil
  • salt and pepper, to taste
  • optional: shredded cheese of your choice

Steps

  1. Combine spinach, kale, and pears in a bowl.
  2. Combine olive oil, apple cider vinegar, honey, and salt and pepper to create a dressing. To make this step easier, use a blender for seamless mixing.
  3. Top with pecans and shredded cheese.

 

Strawberry Avocado

This may not be a completely winter salad, but bear with me. (Source – Me!)

Ingredients

  • about 2 handfuls of spinach
  • 1 cup strawberries, halved
  • 1 mini avocado, sliced
  • vinegar
  • cup orange juice
  • cup olive oil
  • salt and pepper, to taste

Steps

  1. Combine spinach, strawberries, and avocados in a bowl. Leave a small amount of strawberries out.
  2. Combine olive oil, orange juice, honey, and salt and pepper to create a dressing. To make this step easier, use a blender for seamless mixing.
  3. Top with the remaining strawberries.
